Sample Menu

Breakfast: Spinach and buffalo mozzarella frittata

Baby spinach leaves seasoned with nutmeg and fresh buffalo mozzarella in free-range egg frittata. Eggs are a good source of protein and choline, an essential nutrient for brain health.

Morning Snack: Cinnamon Spiced Plums

Cinnamon infused baked plums served with mixed seeds that are a good source of essential fatty acids.

Lunch: Wasabi Rice Salad

A light, refreshing salad of edamame beans, brown and wild rice served with a sharp wasabi dressing on a bed of mizuna leaves. Edamame beans are an excellent source of vegetable protein which helps to lower bad cholesterol levels.

Afternoon Snack: Artichoke, Red Pepper & Rosemary Dip with Oatcakes

Artichoke hearts blended with rosemary, thyme and roasted red pepper served with wholegrain oatcakes. Artichokes are beneficial for the liver, helping to protect against toxins and infections.

Dinner: Chickpea and Aubergine Tagine

Moroccan inspired aubergine, courgette, and chickpea tagine served with barberries and za’atar couscous. Barberries contain high amounts of the antioxidant vitamin C.
