Sample Menu

Breakfast: Banana & Walnut Bircher Muesli

Oats and banana mixed with coconut yoghurt and walnuts. Oats provide a steady energy burst to keep you going all morning.

Morning Snack: Melon, Strawberry & Balsamic Fruit Salad

Served with a balsamic syrup and cashew nuts. Strawberries have good skin-cleansing properties, and are rich in flavonoids, which help support a healthy weight.

Lunch: Avocado, Bean & Pumpkin Seed Salad

Perfectly ripe avocado and a pearl barley, mange tout, radish and pumpkin seed salad, served with a ginger and pumpkin oil dressing.

Afternoon Snack: Beetroot & Hazelnut Brownie with Coconut Cream

Delicious home-made brownie. Beetroot is an excellent source of folic acid and a very good source of fibre, magnesium and potassium.

Dinner: Lightly Spiced Coconut & Tomato Lentils

Spiced puy lentils sautéed in a cherry tomato and coconut sauce served with wild rice and steamed broccoli.
