Morning Snack: Tangerine & Pistachio Nuts
Pistachio nuts are a good source of the essential fat linoleic acid which can benefit the skin.
Lunch: Wasabi Soy Bean & Brown Rice Salad
A light & refreshing salad made of fresh soy beans and asparagus served with a sharp wasabi dressing on a bed of rocket. Soy beans are an excellent source of vegetable protein which helps to lower the bad cholesterol levels.
Afternoon Snack: Banana & Blueberry Muffin
A delicious gluten and dairy free muffin. Bananas are a good source of potassium.
Dinner: Vegetable Moussaka
Griddled aubergine & butternut layered with a chunky tomato, mushroom and red pepper sauce baked with a yoghurt and feta cheese topping.
